Granola Cups

A great meal prep breakfast for the kids, and a great non-traditional way to enjoy granola!

Granola Cups: Makes about 15

  • 3 cups of your favorite Mack’s granola (Fruit Cave is really good for this. If you can’t use our granola, just find a looser granola at the store, steer away from granola clusters.)
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp grated nutmeg
  • 1/4 tsp kosher salt
  • 1 1/2 cups milk of choice
  • 2 eggs (or egg replacement)
  • 1/2 cup maple syrup
  • 1/2 cup applesauce of choice
  • 1/2 tsp vanilla
  • 1 cup apples, diced (optional)

Preheat your oven to 350F, and grease 2 muffins pans. Set aside.

  1. In a medium bowl, mix together all of your dry ingredients.
  2. In a separate medium bowl, whisk together your eggs, milk, syrup, vanilla, and applesauce until thoroughly combined.
  3. If using, add your chopped apples to the wet mixture.
  4. Add your dry ingredients to your wet ingredients and mix well.
  5. Using a 2 oz scoop (or 1/4 cup measure), add a scoop of the batter to each muffin cup. Your batter will probably look quite loose, don’t panic! Your granola will absorb everything.
  6. Bake for 30 minutes, rotating your pans at the 15 minute mark to promote even baking.
  7. Once fully baked, allow them to cool completely at room temperature.
  8. Meal prep them out into containers or add to an airtight container and store.
  9. Enjoy!

Petpalooza 2021

The event runs from noon to 4PM, and I’ll be there slinging granola,  including a special flavor made just for this event, Puppy Chow Granola! Inspired by the sweet treat named after the sweetest companions, toasted granola coated with natural peanut butter and dark chocolate, tossed with powdered sugar!

Cocoa based granola, rainbow sprinkles, with a dried cherry on top. Vegan and nut free, perfect for sprinkling on an actual sundae.

We took last Friday off of new recipes to prepare for our first day at the market Saturday, but fret not. We’ll be back to our regularly scheduled programming this week. It went so well! We absolutely loved meeting lots of new friends and seeing everyone’s smiling faces in the beautiful (but windy!) weather. Thank you for making our first market day awesome. ❤

Opening Day!

It’s opening week! 🥳

This is our starting lineup for the Williamsville Farmer’s Market’s opening day (Saturday, 6/5 from 8am-1pm) and we’ll be adding specials and other treats as the season goes on! Also available is our Cauldron Collection, and we’ll be stamping granola loyalty cards and dealing out stickers. 😊

This month’s flavor of the month is Streetcart Almond Cherry Granola, a dairy-free sweet and hint of savory deal, all delicious.

PB&J Granola

Granola is a fun, versatile goody that’s easy to make at home. Great over yogurt, ice cream, and you can even use it to top baked goods with!

PB&J Granola: Makes About 2 Quarts

4 cups rolled oats

¼ cup oil

¼ cup honey

¼ cup jelly of choice

1 tbsp vanilla

½ tsp cinnamon

1 cup peanuts

⅔ cup raisins

While you’re getting everything together, preheat your oven to 350F.

  1. Mix together your oil, honey, jelly, cinnamon and vanilla in a small bowl until well combined.
  2. In a larger bowl or container, add your oats and peanuts.
  3. Add your oil mixture to the oats, mix it up until everything is even. The oats will absorb some of the liquid so it’ll take a little bit to mix, but that’s a-okay.
  4. Grab an unlined baking tray, pour everything out, then flatten it out into one even layer.
  5. Place into your oven for 30 minutes, stirring the oats every 10 minutes.
  6. On your last stir, add in your raisins and mix.
  7. Let this cool on the counter until it is room temp, and you can throw it in any container you’d like to store it in. (We store ours in a large glass jar.)
